Eggs in a basket

I've discovered a new favorite to eat!
Eggs in a basket/ Eggs in a nest/ Toad in a nest/ Bird's Nests, whatever you want to call them

I can't believe how it is possible that it tastes so different than when you'd just bake some eggs and have some toast with them.


It is SO simple:
Melt some butter in a large pan.
Cut out holes in your bread (using a cookie cutter or a glass) and add the bread to the butter. Make sure both sides are coated in butter. Don't forget to use the cut out bread too! Delicious :)
Crack your eggs in the holes and let them cook for a couple of minutes.
Flip the bread&eggs and season with some salt and pepper.

Enjoy your tastiness!!
Too bad I'm out of eggs, I could eat this all day long!

Tomato-basil-cheese "pie"!

Dear friends,

I'm happy to tell you that for the last 2 weeks I've been watching my diet and have lost about 1.5 kg! That is 3 pounds. I'm very proud of myself and my sweet MIL gave me her Weight Watchers Book and I've been doing this since Monday.



I've made some delicious new meals and thought I'd share one with you!
It's a vegetable pie with tomato, mozzarella, feta cheese and basil!
Mmm :)

You'll need:
* 1 pie crust
* 3-4 tomatoes in slices
*20-25 fresh basil leaves
* mozzarella in slices (depends on how much you want, I used about 250g)
* feta cheese, crumbled (I used 1 package)

It is pretty easy:
You press the pie crust in your baking dish. Then you put in
one layer of tomatoes,
one layer of basil leaves,
one layer of mozzarella,


one layer of feta (I use feta because I LOVE it! It's such an amazing taste!)


second layer of tomatoes
followed by basil and 
last layer of mozzarella.


You bake this for about 30-40 minutes on 180°C or  350°F

And you should now have something like this:


It is best to let it cool a bit because there's a lot of fluid from the cheese and tomatoes, so it has to set again. You could also add in some breadcrumbs before your first layer of tomatoes, they absorb some of the fluids.

Bread Pudding

I made some bread pudding yesterday!
Last weekend we had J's parents over for a first family meeting and we ate little breads with all kinds of cheese, meat, soup, veggies, etc, but we obviously had too much bread. Which I decided would be wasted if I didn't make a bead pudding ;)

It's so simple!

You need:
-all the leftover bread (I had about 400 g)
-Milk, about 600 ml (or untill soaked)
-250 g sugar
-cinnamon
-eggs (the recipe said 5 eggs but we only had 3)
-Some raisins

Not my picture because I forgot to take a picture befor we ate it - oops

How to:
Put all the bread in a bowl, heat the milk and the sugar and add it to the bread. Let it soak for approx. 10 minutes. Mix it (with fork or kitchen robot) and add some raisins. You can also add apple slices or other things you like. This recipe is really just throwing everything together and it almost always works!
Bake for an hour at 175°C.

Enjoy!
You can eat this as a dessert or breakfast and you could add some jam if you would like that.

12 new things: leek soup

When I get bored I read blogs. As I'm bored a lot, I read a lot of blogs :)
And a couple of days I found Like A Warm Cup of Coffee and I love this blog! Sarah Mae is a wonderful woman!
I decided to jump in on her challenge to learn something new each month!


 My new thing this month is making a soup that I love. My mother is really good at making soup, so I asked her for a recipe: Leek soup (is that a correct translation? I'm not sure, I think the Duth "prei" sounds more yummy than leek...)

You will need:
-meat for soup (with or without a bone)
-leek (hehe, there's that funny word again!), I used three pieces.
-1 onion
-2 carrots

Let the meat cook in a big pot of water for about an hour.
Slice the onion and add to your pot.
Wash and slice your leek into little parts. My father likes big pieces but I prefer smaller ones because the big pieces somehow always burn my tongue. Add the leek to your pot.
Wash and slice your carrots into pieces, again as big as you want.

Let it cook for another hour, add 2 beef cubes and voilĂ ! Your delicious soup is ready :)
If you don't like eating veggies, you could always mix the soup with a mixer. Just don't forget to take your meat out first!


I've learned to make something new :) It's not hard and very healthy!

Brownies for Caroline

I'm going to Antwerp tomorrow with one of my best friends, Caroline. If I would have to describe her in two words, I'd go for chocolate and coffee! All kinds of chocolate and all kinds of coffee...
So I decided to make her some brownies!



I don't kow how to edit pictures so it's not as pretty as most pictures here in blogworld are, but you get the idea.
